A simple tomato and basil sauce can be the best thing to have in your fridge. This can be used in a pasta, lasagne, pizza, the list is endless. I promise once you make this you will never buy a jar of sauce again!
Ingredients:
- 1/4 cup extra virgin olive oil
- 5 garlic cloves, sliced very thin
- 2 cups of canned, whole tomatoes, with their juice, coarsely chopped
- salt
- 1/4 cup fresh basil leaves, torn into small pieces
Directions:
- Pour all but 1 tbsp. of olive oil and the garlic in a large pan over a medium-high heat and cook until the garlic begins to sizzle, but doesn't brown.
- Add the tomatoes and cook over a medium-high heat until the tomatoes have reduced and separated from the oil. This will be about 15 minutes. Season with salt.
- Add the basil at the end and cook for another 2-3 minutes.
- Pour direct onto pasta or into a sterilised jar. Once cool put it in the fridge.
